Peanut noodles saved me $25

Last night my octogenarian friends wanted me to come to the clubhouse to hang out and eat things that will kill me. When we hang out, I don't make it home until 9:15 or so, and because Marty had to be at work at 5am, he wanted me to just pick up pizza on the way home. I had a different plan.

As I was leaving I called and had one of the boys put water on for pasta. When I got home, the water was boiling so I dumped the pasta in. As the pasta cooked, I made the sauce. All in all, it took less time than sitting there waiting for the pizzas to be made, it tasted better, and saved us $25. Not a bad deal!

The recipe I use is based on this one, at Frugal Veggie Mama - which by the way is a great site, even if you aren't frugal, a vegetarian or a mama. Lots of ideas for feeding your family frugal, healthy foods, and she is a pro at using up what she has!

Peanut Noodles
1/2 cup peanut butter (I use crunchy natural)
1/2 cup water
4 Tbs. soy sauce
2 Tbs. maple syrup
2 Tbs. rice vinegar
1 tsp ground ginger
1 tsp. chili powder
2 lbs. pasta - cooked
Optional add ins: beans, vegetables


Mix all sauce ingredients. Mix in cooked pasta. Serve.

When you consider that this recipe used up a lot of things that we would have had to give away, it makes it even better!
